Cauliflower Steaks
Cauliflower in another form of versatility. These are great as a side dish or top them with a protein and they can become the main too.

- 2 heads Cauliflower
- 3 eggs
- 1/2 cup parmesan
- 1 pint grape/cherry tomatoes
- 4 cloves garlic
- 1.5 tbsp fresh rosemary (or a different herb you enjoy)
- 1 tsp olive oil
- salt and pepper to taste
Preheat oven to 400 degrees
Cut the cauliflower down the middle, and then cut off two steaks from the side
Whip the eggs in a wide bowl or lipped plate, and place the parmesan on a plate
dredge the steaks first in the eggs and then coat with the parmesan
Spray the cookie sheet, place steaks on sheet and put it in the oven for 45 min
Meanwhile.... Heat olive oil and tomatoes in pan for about 3 minutes
Add the garlic and rosemary and cook for another 5 minutes on medium to low heat
Spoon the tomatos over the cauliflower and enjoy!
