Cauliflower in another form of versatility. These are great as a side dish or top them with a protein and they can become the main too.

Ingredients
- 2 heads Cauliflower
- 3 eggs
- 1/2 cup parmesan
- 1 pint grape/cherry tomatoes
- 4 cloves garlic
- 1.5 tbsp fresh rosemary (or a different herb you enjoy)
- 1 tsp olive oil
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees
- Cut the cauliflower down the middle, and then cut off two steaks from the side

- Whip the eggs in a wide bowl or lipped plate, and place the parmesan on a plate

- dredge the steaks first in the eggs and then coat with the parmesan

- Spray the cookie sheet, place steaks on sheet and put it in the oven for 45 min
- Meanwhile.... Heat olive oil and tomatoes in pan for about 3 minutes

- Add the garlic and rosemary and cook for another 5 minutes on medium to low heat

- Spoon the tomatos over the cauliflower and enjoy!
