Cauliflower Steaks

Cauliflower in another form of versatility. These are great as a side dish or top them with a protein and they can become the main too.

Equipment

  • bowls for dipping the steaks
  • whisk

Ingredients
  

  • 2 heads Cauliflower
  • 3 eggs
  • 1/2 cup parmesan
  • 1 pint grape/cherry tomatoes
  • 4 cloves garlic
  • 1.5 tbsp fresh rosemary (or a different herb you enjoy)
  • 1 tsp olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degrees
  • Cut the cauliflower down the middle, and then cut off two steaks from the side
  • Whip the eggs in a wide bowl or lipped plate, and place the parmesan on a plate
  • dredge the steaks first in the eggs and then coat with the parmesan
  • Spray the cookie sheet, place steaks on sheet and put it in the oven for 45 min
  • Meanwhile.... Heat olive oil and tomatoes in pan for about 3 minutes
  • Add the garlic and rosemary and cook for another 5 minutes on medium to low heat
  • Spoon the tomatos over the cauliflower and enjoy!
