
Parsnip 'Hash' Browns
Hash browns are so classically breakfast. But white potatos dont have a ton of nutritional benefits and the carbs dont always agree with me.... So I came up with an alternative. They are also a great side dish or in a salad.

- cookie sheet
Ingredients
- 4 Parsnips
- 1/2 tbsp Olive oil
- 1 tsp Salt
- 1 tsp Pepper
Instructions
- Preheat oven to 375 degrees
- Line a baking sheet with parchment paper
- Peel and dice parsnips
- Put in bowl and mix with oil, salt and pepper
- Spread on baking sheet and bake for 40-50 minutes.
