Parsnip 'Hash' Browns

Hash browns are so classically breakfast. But white potatos dont have a ton of nutritional benefits and the carbs dont always agree with me.... So I came up with an alternative. They are also a great side dish or in a salad.

  • cookie sheet

Ingredients
  

  • 4 Parsnips
  • 1/2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions
 

  • Preheat oven to 375 degrees
  • Line a baking sheet with parchment paper
  • Peel and dice parsnips
  • Put in bowl and mix with oil, salt and pepper
  • Spread on baking sheet and bake for 40-50 minutes.
