Cauliflower Rice

Cauliflower makes a great low carb and grain free option as a side dish. I prefer to buy frozen (so is on hand and doesnt go bad before I can use it) over making it myself, because its one less step (and a few less dishes) when making dinner. I steam cook the rice (with the cover on the pot) and then saute it once its soft for the best cooked results.

  • 10 in skillet

Ingredients
  

  • 1 14 oz Frozen Cauliflower rice (can use fresh)
  • 1 onion finely diced (can sub with scallions or leeks)
  • 4 cloves garlic finely diced
  • 1 tbsp olive oil
  • 2 cups chicken or vegetable broth (low sodium)
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Add oil, onions, and garlic to the pan and saute for 5 min
  • add cauliflower rice, broth, salt and pepper. Cover pan and cook on medium for 10 min
  • Remove cover and saute until all the liquid evaporates, about 7 min
  • Either serve immediately or refrigerate for up to 2 days
