Kugel is a traditional Jewish food from Eastern Europe. It’s basically a non-dairy quiche without a crust. What I love about making this Kugel, is you can alternate the veggies that you are using. Don’t have broccoli, it can be only cauliflower. Would you rather use zucchini? Go for it. Asparagus would be yum too.
It freezes really well. Once frozen it can defrost in the fridge or heat it up in the oven on 300.

Ingredients
- 32 oz Frozen broccoli and cauliflower mix
- 4 Eggs
- 1 cup Light mayonaise
- 2 tsp Sea salt
- 1 tsp Black pepper
Instructions
- Preheat the oven to 375
- Coat a 9 inch round or square pan with a olive oil nonstick spray
- In your blender or food processor, chop and blend all your ingredients till the mixture is smooth
- Pour into the baking pan
- Bake at 375 for one hour or until the edges are golden
