Chicken Burgers

These were so yum and versatile. 

You can eat them with a salad, in a pita, and they taste great as leftovers the next day. (If you are like me and don’t want to cook every single day dinner). 

I used to think that to be perfect mom – the house had to look a certain way and fresh non easy dinners had to be made. 

Thankfully I  got over that. 

Also once I learned true healthy habits, I learned that healthy dinners don’t need to take an hour and forty million dishes to prep. 

So now I make yummy easy dinners and usually there are leftovers for another night of the week. The trick so they don’t dry out – I cover them for 5 min and then sear them on each side for 2.

Depending on the size that you make is depending on how many you get. I like them a little fuller so they stay juicy in the middle. I got about 15 patties from this.

Ingredients
  

  • 2 lbs Ground chicken
  • 2 Eggs
  • 3 tbsp Chopped fresh parsley (or 1.5 dried)
  • 2 tbsp Panko crumbs or almond flour
  • Salt and pepper to taste

Instructions
 

  • Mix all your ingredients together
  • Make sure your hands are slightly wet and form about 15 patties
  • Sear them in a pan on medium heat for about 3-5 min a side
