Finding versatile and sneaky ways of feeding my family healthy choices is always at the top of my list.
 
When our daughter Leah was little, she ate everything. I mean everything. People were always asking me for tips on how to feed their kids wholesome food because Leah would eat chicken, salmon, Brussel sprouts, broccoli, and asparagus, etc.
 
She was the kid that would ask for steak and sushi when we went out to eat, and she still prefers steak and sushi when we go out.
 
There is a cafe by us and instead of ordering muffins, bagels, or other pastries, she orders sushi.
However, with vegetables, it’s a whole nother story.
 Her amazing eating habits lasted until she was 2.5 and started school where they provided lunch.
 
This led me to an interesting journey of dealing with my daughter’s eating habits… but that’s a story for another time….
 
My family has a love/hate relationship with fish. They’ll eat tuna fish salad, raw sushi – but that’s it.
 
Salmon is touch and go, tuna tartare is a sometimes food… so that puts me in a position where I have to come up with alternatives to get all those good omegas and other nutrients into their diets.
 
Making these salmon burgers is just the kick. They don’t have a fishy taste, and they can be frozen, they can be eaten hot or cold.
 
You can eat them with a bun, taco, or lettuce (in my head this sounds like a Dr Seuss book lol).

Salmon Burgers

Easy to make salmon burgers for dinner. I baked them but you can easily grill them or sear them in a saute pan. They can also be made mini and served as an appetizer
Prep Time 15 minutes
Cook Time 25 minutes
Course Appetizer, Main Course

Equipment

  • food processor
  • cutting board
  • cookie sheet

Ingredients
  

  • 1 lb salmon remove the skin
  • 1/2 cup celery leaves (removed from a head of celery) or parsley leaves
  • 2 cubes frozen parsley or 2 tsp dried or 1/8 cup fresh
  • 2 cubes frozen cilantro or 2 tsp dried or 1/8 cup fresh
  • 4 cloves garlic
  • 1 large egg
  • 1 tsp honey
  • salt and pepper

Instructions
 

  • Preheat oven to 375 and oil cookie sheet
  • Rinse salmon, deskin and place in food processor
  • All all ingredients to processor
  • Crush for 3 minutes
  • Scoop onto oiled cookie sheet
  • Bake for 20-25 min
  • Serve fresh or refrigerate and serve later
